If you have fresh apples use them, if not use the canned apple pie filling.

Ingredients
  • 6-8 Apples, cored and sliced into 8ths, and then into quartered or apple pie filling*
  • ½ cup currants
  • 2 tbsp flour
  • 2 tbsp honey (or more depending on the sweetness of your apples)
  • 1 tbsp cinnamon
  • ½ tsp nutmeg
  • 1/8 tsp clove
  • 2 tbsp butter cut in small pieces
Topping
  • ½ cube unsalted butter, melted
  • ¼ cup organic whole wheat pastry flour
  • ¼ cup organic unbleached white flour
  • ½ cup organic rolled oats
  • pinch salt
  • ¼ cup sugar
  • ¼ cup walnuts, chopped (or almonds or pecans)
Instructions
  1. Preheat the oven to 400 degrees.
  2. Mix the apple pieces with spices and the lemon and honey, stir in the flour. Butter an 8 x 8” or larger baking dish. Pour the fruit mixture into the dish. Top with little pieces of butter. (also see apple pie filling in “preserving for summer”)
  3. Mix together the flour, oats and salt. Stir in the melted butter until all ingredients are coated. Stir in the sugar and finally the chopped walnuts.
  4. Spread the topping over the fruit. Bake in preheated oven for 45 minutes until the fruit is bubbling, juices thickening and the topping is a golden brown.
Recipe Notes

Canned apple pie filling can be found in Preserving for the Future. If using canned apple pie filling you can reduce your cooking time to 30 plus minutes.

 

If you've used fresh apples and added the oallieberries (or blackberries or?) and dried tart cherries, omit the spices. Using fresh fruit you may cook a little longer, making sure that the juices are bubbling and thickened.
