Ingredients
  • 3-4 Long Japanese eggplants
  • zucchini
  • 2 green bell peppers
  • extra virgin olive oil
  • salt and pepper
Instructions
  1. Slice eggplant and zucchini into ¼” thin slices. Salt and allow to drain for 30 minutes. Brush off the salt and excess moisture.
  2. Slice the green peppers into ¾” wide slices.
  3. Brush the grill with oil and heat it to medium high. Brush the vegetables with oil.
  4. Grill each side of the eggplant and zucchini twice in order to attain a grid of grill marks. Grill the peppers on each side until tender but not too soft.
  5. Season as desired.
