Ingredients
  • 3 blood oranges or tangerines
  • 1 pink or ruby red grapefruit
  • 2 navel oranges
  • ½ small red onion or 1 shallot sliced paper thin
  • Dressing
  • 3 tbsp extra virgin olive oil
  • 1 tbsp champagne vinegar
  • 2 tbsp each lime and orange juice
  • ¼ tsp chopped fresh tarragon
Instructions
  1. With a very s harp paring knife, cut the tops off the citrus (where the stem was attached to the tree). 

  2. With the top side flat on your cutting board cut down from the top to the bottom through the peel and pith to the flesh. Turn the citrus as you go until you have completed the round.
  3. Slice the bottom off. Remove seeds from the grapefruit. Cut the fruit into bite-sized pieces
  4. Combine all the dressing ingredients except the tarragon. Toss the citrus with red onion and salt.

  5. Garnish with chopped tarragon. Plate and serve.
