A quick, healthy Greek chicken.  The marinade may be used for lamb or beef as well.

Ingredients
Souvlaki
  • 1 Lb chicken tenders
  • 1 large garlic clove, minced
  • 2 sprigs fresh oregano, chopped
  • 1 juicy lemon, juiced
  • 2-4 tbsp extra virgin olive oil
  • salt and pepper
Tzatziki Sauce
  • 1 cucumber, peeled seeded and chopped
  • ½ cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • fresh dill
  • salt and pepper
Instructions
Tzatziki Sauce
  1. Combine the tzatziki ingredients, excepting the dill. Place in a bowl, sprinkle with fresh dill, refrigerate until Souvlaki is ready.
Souvlaki
  1. Heat the grill to a medium high temperature, over 400 degrees F.
  2. Combine all of the ingredients.
  3. Marinate the chicken for 2-3 hours, making sure that all of the chicken is coated with the marinade. Meanwhile, soak the skewers in water so that they will not burn when you grill the chicken.
  4. Remove the tenders from the bowl. Skewer the chicken.
  5. Grill the chicken, about minutes for each side.
  6. Serve the souvlaki with the taztziki sauce.
