Ingredients
  • 3-4 Oranges
  • 1 cup sugar
Instructions
  1. Slice oranges into ¼” rounds. Place on plate.
  2. Place sugar in sauté pan, so that the sugar meets the edges of the pan. Put on high heat and let the sugar begin to melt at the edges of the pan, about 3-5 minutes. As the sugar begins to melt, gently move the pan so that the unmelted sugar moves to the edges of the pan. As melting cracks begin to appear in the center of the pan, reduce the heat to medium and take a clean wooden spoon and gently stir the sugar so that the edges do not burn.
  3. When the sugar is runny and relatively clear take it off the heat and let it sit for 1 minute.
  4. Take a fork, coat it in melted sugar, raising the fork about 1’ above the oranges, drizzle the hot carmelized sugar onto each orange slice, moving the drizzle from one side to the other in an attractive pattern.
  5. Let the sugar cool on the orange slices and serve within 1 hour so that the sugar does not melt but remains delicate and hard, like glass.
Recipe Notes

*How to use excess carmelized sugar… pour the extra hot melted sugar onto aluminum foil or parchment paper, letting it spread by itself. Let it harden. Crack it into amber, glass like pieces. Use as a decoration at that point, or pulverize it to top icing, ice cream, a muffin, etc. Tips: don’t over stir, reheat if it hardens too quickly, watch it carefully so that it doesn’t burn.
