Green Tomato Bruschetta

At the end of tomato season, if you’re lucky, you will have several green tomatoes of any size remaining on the plants.  Harvest and prepare these to enjoy a delicious bruschetta topping.  Nothing goes to waste!

This bruschetta uses the green tomatoes that you preserved a few weeks ago. It's a quick and easy snack or appetizer.

Ingredients
  • 1/2 Day old baguette
  • 1 Jar Preserved Green Tomatoes for Bruschetta
  • 1 clove garlic optional
  • Olive Oil
Instructions
  1. Cut 8 pieces of a baguette into 1/2" slices. Toast the slices on a grill. They burn easily, so make sure to watch them.
  2. If you wish, rub the toasted crostini with garlic, then brush with a good olive oil or use the oil from the preserved green tomatoes.
  3. Put the thin slices of preserved tomatoes onto the crostini and enjoy!
