Shaved Asparagus Salad

If you’re lucky enough to grow asparagus in your yard, pick the first spring asparagus for this salad. Raw, very fresh asparagus, plucked from the garden is so delicious that it often doesn’t make it to the kitchen.

Ingredients
  • 1 # Asparagus as fresh as possible
  • 2 tbls lemon juice or more to taste
  • ¼ cup toasted pine nuts
  • Parmesan or Schock Junipero
  • salt and pepper
  • olive oil best quality
Instructions
  1. Clean the asparagus.
  2. Holding the larger tough end, shave off thin asparagus ribbons using your vegetable peeler.
  3. Start to shave just at the point where the asparagus becomes tender and is easily broken.
  4. Toast pine nuts.
  5. Combine lemon juice, olive oil to taste, salt and pepper. Dress the asparagus shavings, gently tossing. Top with pine nuts and Parmesan curls.
  6. Dive in.

Schoch Family Farms Junipero is a firm, full flavored cheese resembling Parmigiano but a little softer and less salty.
