Ingredients
  • 1 Cup of white long grain basmati rice
  • 2 cups chicken stock
  • 1 large tomato pureed
  • ½ yellow onion diced
  • 1 stalk celery diced
  • 1 clove minced garlic
  • 2 tbsp avocado or olive oil
  • 1 tsp Santa Fe chili powder
  • juice of 1 lime
  • salt and pepper to taste
  • 1 bunch cilantro minced
Instructions
  1. Rinse the rice in a strainer under running water until the water runs clear. Put the rice into a 2 quart sauce pan with 2 cups of chicken stock. Bring it to a boil, turn down to a slow simmer and cover for 15 minutes. Set aside.

    In a sauté pan heat the oil. Add the diced onion and celery. Sauté for 5 minutes. Add the garlic. Sauté for 3 more minutes.

    Stir in the tomato puree, chili powder, and lime juice.

    Stir in the rice and cilantro. Salt and pepper to taste.
