Carnitas
Ingredients
  • 2-3 pounds of pork shoulder
  • 3 medium-sized onions chopped coarsely
  • 3-5 cloves garlic peeled and chopped
  • 2 tbsp avocado oil
  • 1 1/2 cups orange juice
  • 1 quart chicken stock (optional)
Instructions
  1.  Cut the pork roast into large chunks leaving the fat on, it will render. Put the pork into a large pot, preferably cast iron. Add orange juice and seasonings. Add enough water or chicken stock to cover. Bring to a simmer and let simmer 2 hours until liquid is cooked down to about 1 inch. Turn on medium high and reduce, allowing the Pork to brown. Remove from heat and shred. 

    Serve with guacamole, salsa and hot tortillas.
