Ingredients
  • 5 carrots peeled, and chopped coarsely
  • 2 ½ quarts of chicken or vegetable stock
  • 1 ½ inches ginger root peeled and sliced very thin
  • 2 cloves garlic
  • ¼ tsp each cinnamon cumin, and allspice
  • 1 lime juiced
Instructions
  1. Bring the carrots and the stock to a boil and reduce to simmer. Add the garlic, ginger, lime juice, and spices. Simmer for about 25 minutes, until the carrots are soft enough to mash with a fork against the side of the pot.
  2. Transfer the mixture to a blender and process until smooth and satiny. Return to the pot. Reheat until very hot, but not boiling. Correct the seasoning with salt and white pepper.
  3. Possible additions:
  4. For a very rich flavor, add 1/2 cup of crème fraiche or cream. Finish off with a pat of butter. Stir until butter is melted. 

    Garnish with minced cilantro and lime slices.
