Ingredients
Pastry dough
  • 3 ½ Cups pastry flour
  • 2 ½ sticks of cold unsalted butter
  • 4 tbsp cold shortening
  • 2 tsp salt
  • ¾ cup ice water
Filling
  • 5 cups pitted sweet cherries
  • ½ cup sugar
  • 3 tbsp corn starch
  • 1 tbsp lemon juice
  • 1 tsp almond extract
Instructions
  1. To make the pastry, put the flour, butter, shortening, and salt into a food processor bowl or mixing bowl with a pastry attachment. As you blend the ingredients, drizzle the ice water into the mixture until it forms a cohesive ball.
  2. Cut the pastry in half and wrap separately in plastic wrap. Chill for at least 40 minutes. If you plan to use this at a later date, freeze in freezer wrap.

  3. Remove the dough from the refrigerator 30 minutes before you are ready to roll the bottom piece of dough. Cover your workspace with plastic wrap, parchment paper or a pastry towel. Sprinkle the surface with flour.Roll the dough out about two inches larger than your pie plate.

  4. Pick up the plastic wrap, parchment, or pastry towel and turn it over onto the pie plate. Peel off the plastic wrap, parchment, or pastry towel. Gently push the pastry into the bottom and sides of the pie plate. Trim the edges evenly and fold over the top of the rim.

  5. Cover and chill for 30 minutes while you put together the filling: Place the cherries in a bowl and sprinkle with the sugar and cornstarch. Using a rubber spatula, combine the mixture evenly. Fold in the lemon juice and almond extract,
  6. Scoop the filling into the chilled pastry, making a slightly higher mound of the fruit in the center of the pie.
  7. Roll out the top layer of pastry in the same way you did the bottom. Cut a decorative pattern in your dough, or you can cut half-inch strips to make a lattice weave.
  8. Bake the pie at 400 degrees for 10 minutes. Reduce the oven temperature to 350 degrees and continue baking for another 25 minutes. Allow the pie to cook for 30 minutes before serving. A scoop of vanilla ice cream is a wonderful addition.
