Ingredients
  • 3 Lemons, pulp puréed and rinds grated.
  • 1 ¾ cups sugar
  • 1 cup water
  • 2 tbsp of curaçao or cointreau
  • 2 egg whites, stiffly beaten
Instructions
  1. Dissolve the sugar in the water. Boil for 5 minutes. 

  2. Add the puréed pulp and grated rind. Add the cointreau or curaçao. Cool completely.

  3. In the mean time, beat the egg whites until stiff. Fold the egg whites and the juice of 1 lemon into the cooled syrup. 

  4. Pour the mixture into a four-cup stainless steel pan and freeze until firm around the edges. 

  5. Remove from the freezer and beat the mixture with an electric hand mixer for 1 minute. 

  6. Return to the freezer until firm.
