Ingredients
  • 15 Cloves of garlic
  • 8 cups or 2 quarts of chicken stock
  • 1 sprig of parsley
  • 1 sprig of sage
  • 3 egg yolks
  • 1 cup of half and half or cream
  • 2 sprigs of finely minced parsley
  • salt and pepper to taste
Instructions
  1. Simmer garlic cloves in chicken stock with thyme and sage until tender, about 25 minutes. Puree soup in blender until smooth. Pour contents of blender back into the soup pot. Beat the yolks into the cream or half and half. Blend completely. Stir egg mixture into the soup with a wire whisk until completely blended. Over the lowest heat, stir constantly until the soup is heated through. Remove from heat immediately. Check the seasoning. Garnish each individual bowl with minced parsley.
  2. An alternative suggestion: Sprinkle parmesan over baguette slices, three per serving. Broil long enough to melt the cheese slightly. Put slices on the bottom of the soup bowls and pour the soup over them. Give the bread a little time to absorb the soup before serving.
