Timbale is an Arabic word, thabal, meaning drum. It originally referred to a small metal round container meant to hold a beverage. Now they are used to serve vegetables, eggs, sauces and purées often with an added pie crust.

Ingredients
  • I cup quinoa
  • 1/2 cup minced onion
  • 1/2 cup currants
  • 1/4 cup sun dried tomatoes
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp turmeric
  • 1 Tbsp olive oil
  • 2 cup chicken stock
  • 1/2 tsp salt
  • 2 tbsp minced parsley
Instructions
  1. In a small sauce pan, sauté the onion in the olive oil until softened, but not browned. Add all the spices along with the quinoa and stir until evenly mixed. Add the chicken stock, currants, sun dried tomatoes and salt. Bring to a boil, reduce the heat and gently simmer, covered for 12 – 15 minutes. Set aside for five minutes before you stir in the parsley. Distribute the quinoa among 6 ramekins or similar dishes.
