Ingredients
  • 8-10 Peppers sweet small multi colored
  • 9 oz Feta
  • 1 tbsp olive oil
  • 2 tbsp Greek yogurt
  • 2 sprigs fresh mint, chopped
  • 1 lemon zest
  • 2-3 sprigs fresh oregano, chopped
  • 1 egg yolk, beaten
  • salt and pepper
  • ¼ cup Parmesan cheese, grated or shredded
Instructions
  1. Arrange a rack 6” from the broiler and set the oven to broil. Put the peppers on a baking sheet and broil until just soft, about 5 minutes. Transfer to a rack and cool.
  2. In a medium bowl, using a blunger or hand mixer, whip feta, oil, yogurt, herbs and zest, egg yolk and season with salt and pepper.
  3. With a knife, open the pepper lengthwise. Gently scoop out the seeds and ribs.
  4. Stuff each pepper with some of the feta filling. Transfer to a foil-lined baking sheet and chill for 30 minutes. Sprinkle the peppers with shredded cheese.

  5. Broil peppers until the cheese is golden grown and bubbly, and the filling has firmed, about 6-8 minutes.
  6. Transfer to a platter and serve hot.
