Ingredients
  • 1 ½ Onions chopped fine
  • 2 tbsp olive oil
  • 5 tbsp butter
  • freshly ground black pepper
  • 4 medium sized tomatoes peeled, seeded, and chopped
  • 3 yellow fin potatoes peeled and chopped
  • 8 cups (2 quarts) of simmering chicken stock or water
  • 1 each oregano thyme, and basil tied in a bundle
  • 1 bay leaf
  • pinch of cayenne
  • salt to taste
  • fresh minced parsley or tarragon for garnish
Instructions
  1. Sauté the onions in the olive oil until golden brown. Add all the remaining ingredients except the garnish. Simmer for 25 minutes. Take out the sprigs of herbs. Purée the mixture in a blender. Strain. Correct the seasoning. Stir in the butter until completely melted. Garnish with chopped parsley or tarragon.
