Arugula, Red Onion, and Tangerine Salad

Ingredients
  • ¼ pound of fresh arugula
  • 2 tangerines peeled and segmented
  • 6 thin slices of red onion sliced on a mandolin if you have one
  • 6 tbsp balsamic vinegar
  • ½ cup olive oil
Instructions
  1. Wash and dry the arugula. Combine it in a large bowl with the onion and tangerine sections.
  2. In the blender, place 1/4 tsp of salt with 6 tablespoons of balsamic vinegar and a tablespoon of water. Blend until the salt is dissolved. With the motor running, drizzle in 1/2 cup olive oil . Add pepper to taste. Check for acidity and add more vinegar if it is too tame for you or more oil if it is too acidic.
