Fresh Strawberry Ice Cream

When there is an abundance of ripe sweet smelling strawberries, there is nothing better than fresh strawberry ice cream. This rich, custard based ice cream tastes like fresh strawberries and cream. It makes about 1 quart.

Ingredients
  • 2 cups strawberries cleaned, stemmed, and cubed
  • 1 cup sugar
  • 4 large egg yolks
  • 1-1/2 cups organic half and half
  • 1 cup organic whipping cream
  • ¼ tsp vanilla extract
Instructions
  1. Place the strawberries with ½ cup of sugar in a bowl. Crush gently and let the strawberries macerate for at least 1 hour.
  2. In a large bowl, whisk the remaining ½ cup of sugar with the egg yolks until thickened.
  3. In a pot, bring the half and half and cream to a boil.
  4. Temper the eggs by adding a few tablespoons at a time to the hot cream, whipping constantly. Continue slowly adding the cream to the eggs continuously whipping. Add the vanilla. Strain and cool.
  5. Make sure that your ice cream maker is very cold and ready.
  6. Add the strawberries and their liquid just before churning the ice cream. Churn according to the ice cream maker’s instructions. Churn until firm.
