Ingredients
  • 6-8 servings
  • 1 lb. fresh green beans trimmed and cut in half
  • 1 c slivered Spanish onions
  • 1 clove garlic minced
  • 3 tbsp olive oil
  • 6-8 fresh tomatoes seeded and chopped
  • 1 tsp salt
  • ½ c fresh minced parsley
  • ½ c fresh minced mint.
Instructions
  1. Sauté the onions in olive oil five minutes. Add the garlic and green beans. Sauté five minutes more. Add tomatoes and salt. Cover and continue to simmer over low heat until beans are tender. (about 10 minutes). Allow the mixture to cool before adding parsley and mint.

  2. Serve at room temperature.
