Ingredients
  • 2 Heads of butter lettuce
  • 5 ounces of fresh figs, quartered 1
  • 1 tbsp lemon juice (or more, if desired)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp of finely grated Parmesan
  • 3 tbsp toasted pinole (pine nuts)
  • salt and freshly ground pepper to taste
Instructions
  1. Wash the lettuce thoroughly. Spin dry. Tear into bite-sized pieces.
  2. Put the lettuce leaves and figs in a large bowl. Pour the lemon juice and olive oil over the mixture and toss together until each leaf is coated with dressing. Season with salt and pepper.
  3. Plate each salad with equal amounts of lettuce, figs, and pinole. Sprinkle with Parmesan.
