A ubiquitous salad with regional additions through the Middle East.
Ingredients
- ½ Head each romaine and spinach, chopped into bite-sized pieced
- 2 ripe tomatoes, cut into wedges
- 1 cucumber cut into thin rounds
- 1 green pepper, diced
- 1 bunch of scallions, chopped fine
- 12 kalamata olives
- ½ cup crumbled feta
- 4 anchovies
- vinegar and olive oil
Instructions

Rub a wooden salad bowl with a split clove of garlic. Toss all of the ingredients together except for the anchovies, vinegar and olive oil.

Put ¼ cup of vinegar into a blender with 6 tablespoons of water. Add the anchovies and blend for 30 seconds. With the motor running, slowly drizzle in the oil. Dress the salad with half of the dressing and taste. Add more if needed.
