Ingredients
  • 3 Cups grated unpeeled zucchini
  • 1 medium size yellow onion
  • 4 eggs
  • ¼ cup flour
  • ½ cup parsley finely chopped
  • ½ cup fresh mint finely chopped
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ cup avocado oil
Instructions
  1. Heat 1/4 cup of oil in a sauté pan over medium heat. Beat the eggs in a large bowl until whites and yolks are just blended. Add the flour, salt, and pepper. Stir until incorporated into a thin, smooth batter. Add the onion, grated zucchini, mint and parsley, stir thoroughly, but gently.
  2. Use a large serving spoon or a 1/4 cup measuring cup and a spatula. Gently transfer a large spoonful of batter to the pan of hot oil. Sauté until golden brown on both sides. Place on paper towels to soak up any excess oil. Transfer to a plate. Keep warm in a 200 degree oven until all the pancakes are made and you are ready to serve.
