Ingredients
- 1 Cup sugar
- 1 cup almond paste
- 1 ¼ cup unsalted butter
- 1 cup flour
- 1 heaping teaspoon of baking powder
- ¼ tsp salt
- grated zest of 1 lemon
- 2 tbsp lemon juice
- ½ tsp vanilla
- ½ tsp almond extract
- ½ tsp cinnamon
- 6 eggs
- ½ cup slivered almonds
- vanilla ice cream

Preheat the oven to 325 degrees. Butter the bottoms and sides of 9 -inch cake pan with 2 inch sides or 6 individual 3 inch cake pans. Cut wax paper to fit the cake pan bottom(s). Butter the wax paper.

Beat the sugar and almond paste together until completely integrated. Beat in the butter, vanilla, cinnamon, lemon juice, zest, and almond extract. Continue beating until the mixture is light and airy. Add the eggs one at a time, making sure each one is completely mixed in before adding the next one.

Finally, mix the flour, baking powder, and salt together and sift it in batches over the surface of the batter. Gently fold in the dry ingredients.

Pour the batter into the prepared baking pan. Bake in preheated oven for 1 hour. Turn off the oven. Let the cake remain in the oven for another 20 minutes.

Sprinkle slivered almonds over the top of the cake. Serve with a scoop of vanilla ice cream.
