Ingredients
Pastry
- 1 ¾ C flour
- ¼ tsp salt
- 1 stick butter + 2 tbsp
- 2 tbsp shortening
- 5 tbsp ice water
- 2 tbsp butter
- 1 cup blanched and chopped spinach with water pressed out of it
- ¼ tsp salt
- 1 bunch scallions, white part only
- 1/8 tsp nutmeg
- 4 eggs
- ¾ c each heavy cream and ½ and ½
- ½ c gruyere grated

Combine the flour, salt, butter, and shortening in a mixing bowl or food processor. Add ice water a tablespoon at a time. Mix until the dough forms a cohesive ball. Wrap in plastic wrap and chill for 25 minutes before rolling out. Line a nine-inch plate with the dough. Fill with dry beans to weight the pastry down and bake at 350 degree for 8 minutes. Cool to room temperature.

Filling

Sauté the onions in 2 tablespoons of butter. Add the spinach to the onions and season with salt, pepper, and nutmeg. Distribute the mixture evenly over the bottom of the pie shell.

With a wire whip, combine the eggs, cream, ½ and ½ . Add the gruyere and pour the mixture over the spinach. Bake in a 350 degree oven for 35 minutes. Allow ten minutes to cool before slicing.
