Ingredients
- 3 – 4 Lbs bone-in pork shoulder
- 1 tbsp salt
- 2 whole cloves garlic
- 2 carrots peeled and coarsely chopped
- 1 green pepper coarsely chopped
- 1 Spanish onion coarsely chopped
- 3 tbsp olive oil
Instructions

In an ovenproof pan brown the roast on all sides in the heated olive oil.

Remove the roast from the pan and scatter the carrots, pepper, onion and garlic over the bottom of the pan.

Put the roast on top of the vegetables, fat side up. Cover the pan tightly. Roast at 325 degrees for 3 hours. Allow th e roast to rest for at least 20 minutes before carving.
