Coconut Ice Cream
Ingredients
  • 4 Cups 1/2 and 1/2
  • 4 cups cream
  • 2 1/2 cups sugar
  • 1/2 cup fresh coconut finely grated
  • 2 tsp vanilla extract
Instructions
  1. Heat the 1/2 and 1/2 and cream with the sugar and coconut in a 2 quart saucepan. Simmer slowly for 30 minutes. Cool for 15 minutes and then stir in the vanilla. Put the entire contents of the saucepan into a blender and puree for 2 minutes.

  2. Refrigerate for 45 minutes. Transfer the puree to an ice cream maker, following the manufacturer’s directions,. Freeze overnight.
