Auntie Maria’s Panna Cotta

This Italian recipe is super simple. It’s rich, yet light, easy and quick. Top it with sauces, fruits, more cream or naked. It’s “semplice” (sounds like sim-plea-chaa).

Ingredients
  • ¼ cup Water
  • 1 pkg plain gelatin about 2-1/2 tsp
  • 1 pint heavy cream
  • ¼ cup white sugar
  • 1 tsp vanilla extract use the best you can find
  • Fresh Berries cut to desired size
Instructions
  1. Place the water in a small bowl and sprinkle the gelatin over the surface, stirring lightly to avoid clumps. Let it soften for 5 minutes.
  2. In a medium saucepan, on medium high heat, heat the cream and sugar, whisking to insure that the sugar melts. Add the vanilla just as the cream mixture starts to boil. Whisk and remove from the heat.
  3. Add the gelatin, whisking until the cream is smooth.
  4. Pour the cream into 4 serving dishes. Refrigerate for 2-4 hours until completely set.
  5. To serve, you can keep the panna cotta in the serving dish (I’ve used wine glasses), top it with a few berries. Or you can unmold the panna cotta by slightly warming the outside of the container and placing it upside down on a plate. Top with berries.
