Ingredients
  • 1 lb snow peas
  • 1 tbsp butter
  • 1 tsp lemon zest
Instructions
  1. Prepare a large bowl of ice water. Blanch the peas in a saucepan of boiling water for 30 seconds. Drain the peas and put them into the ice water immediately. 

    Drain the peas and put them on a kitchen towel to dry any remaining drops of water. Chill until ready to serve. 

    Melt the butter with the zest in a large sauté pan. Toss the peas with butter until just heated through. Serve
