Adapted from “Saveur” Magazine, these wonderful high protein and low fat appetizers called Piperies Gemises Me Feta can make a meal.

Ingredients
- 8-10 Peppers sweet small multi colored
- 9 oz Feta
- 1 tbsp olive oil
- 2 tbsp Greek yogurt
- 2 sprigs fresh mint, chopped
- 1 lemon zest
- 2-3 sprigs fresh oregano, chopped
- 1 egg yolk, beaten
- salt and pepper
- ¼ cup Parmesan cheese, grated or shredded
Instructions

Arrange a rack 6” from the broiler and set the oven to broil. Put the peppers on a baking sheet and broil until just soft, about 5 minutes. Transfer to a rack and cool.

In a medium bowl, using a blunger or hand mixer, whip feta, oil, yogurt, herbs and zest, egg yolk and season with salt and pepper.

With a knife, open the pepper lengthwise. Gently scoop out the seeds and ribs.

Stuff each pepper with some of the feta filling. Transfer to a foil-lined baking sheet and chill for 30 minutes. Sprinkle the peppers with shredded cheese.

Broil peppers until the cheese is golden grown and bubbly, and the filling has firmed, about 6-8 minutes.

Transfer to a platter and serve hot.
