Green Beans with Peanuts and Red Pepper Flakes

Ingredients
  • 1 Lb green beans
  • 2 tbsp olive oil
  • ½ cup peanuts
  • 1 tsp red pepper flakes
  • salt and pepper to taste
Instructions
  1. Trim the ends of the beans and cut into 1 and a half to 2 inch pieces.
  2. Bring a 1 quart sauce pan to a boil with enough water to cover the beans. Simmer until al dente. Drain and refresh with cold water.
  3. On medium low temperature, heat the olive oil. Add the peanuts and sauté for 2 minutes. Add the green beans and red pepper flakes. Combine the nuts and beans and continue to heat just until hot. Salt and pepper to taste. Serve immediately.
