Salad of Baby Greens, Mint and Lemon

Fresh lettuce from the garden, a sprig of mint, light and delicious with pasta.

Ingredients
  • Baby greens
  • 1 sprig of mint leaves, sliced thinly
  • 1 lemon, juiced and zested
  • 2 tbsp olive oil
Instructions
  1. Soak the lettuce in luke warm water for 20 minutes.
  2. Drain, dry and refrigerate for 30 minutes.
  3. Toss with mint slivers and zest.
  4. In a cup, combine the lemon juice and olive oil with salt and multicolored pepper. Beat until they are fully integrated. Toss the greens with the dressing.
