Salad of Tomatoes, Cucumbers and Mint
I use Early Girl tomatoes because they are both intensely sweet and acidic. Dry farmed tomatoes are dryer and have a more intense flavor and firmer texture. Only Early Girls (or a similar varietal) and cherry tomatoes appear to grow in a dry farmed environment. Vegetables or fruits which are dry farmed are not given water after being planted.

Ingredients
  • 6 Medium dry farmed early girl tomatoes
  • 3 market fresh cucumbers
  • 2-3 peppermint sprigs
  • 1 lemon juiced (2+ tbsp)
  • Belle Farms Virgin Olive Oil
  • salt and multicolored pepper to taste
Instructions
  1. Slice the tomatoes into bite sized chunks. Peel the cucumbers, quartering them lengthwise and cut into bite size chunks.
  2. Mix the lemon juice with the olive oil, salt and pepper.  Gently stir and serve.
