Savory Spinach Pie

Ingredients
Pastry
- 4 ½ Cups of flour
- 2 tsp salt
- 2 tsp dry yeast
- 1 tsp sugar
- 2 tbsp warm water
- 2 cups warm milk
- 2 tbsp olive oil
Filling
- 2 lbs fresh spinach leaves
- 1 medium-sized onion diced
- 1 tsp salt
- pepper
- juice of 1 lemon
- 2 tbsp olive oil
- 1/3 cup pine nuts lightly toasted
Instructions

Make the dough

Put the yeast and sugar in the 2 tablespoons of warm water and set aside for 5 minutes.

Mix the flour and salt together in a bowl. Set aside

Pour the yeast mixture into the 2 cups of warm milk. Stir in the flour mixture and combine thoroughly. Turn onto the floured surface of a pastry cloth and knead for 10 – 12 minutes, until the dough is smooth.

Oil the bowl that you mixed the flour and salt in and then put your dough into the bowl, turning it around and around until the entire surface is oiled.

Dampen a kitchen towel in hot water, wring out and place over the top of the bowl. Place the bowl in a warm spot to rise until it has doubled in size.

While you are waiting for the dough to rise, make the filling.

Rinse the spinach in a colander. Shake off the excess water. Chop coarsely. Put in a large pot, cover, and cook over low heat until the spinach is completely wilted. Squeeze out any remaining moisture.

Return to pan.

Add the remaining ingredients and mix well.

Assemble pies

Divide the dough into 15 balls. Roll each ball out into a circle 4 – 5 inches in diameter. Put a spoonful of spinach mixture in the center of the dough, fold in half and pleat the edges together.

Place the passtries on a cookie sheet. Brush with olive oil. Bake at 375 degrees for 15 minutes.
