Ingredients
- 1 Cup of white long grain basmati rice
- 2 cups chicken stock
- 1 large tomato pureed
- ½ yellow onion diced
- 1 stalk celery diced
- 1 clove minced garlic
- 2 tbsp avocado or olive oil
- 1 tsp Santa Fe chili powder
- juice of 1 lime
- salt and pepper to taste
- 1 bunch cilantro minced
Instructions

Rinse the rice in a strainer under running water until the water runs clear. Put the rice into a 2 quart sauce pan with 2 cups of chicken stock. Bring it to a boil, turn down to a slow simmer and cover for 15 minutes. Set aside.
In a sauté pan heat the oil. Add the diced onion and celery. Sauté for 5 minutes. Add the garlic. Sauté for 3 more minutes.
Stir in the tomato puree, chili powder, and lime juice.
Stir in the rice and cilantro. Salt and pepper to taste.
