Tomato and Basil Bruschetta

Only make this bruschetta when summer’s tomatoes are ripe. Then they are a slice of heaven.

Ingredients
- 4-6 Slices of baguette*
- 4-5 ripe freshly picked sweet tomatoes
- 5-6 fresh basil leaves chopped
- 2 cloves garlic
- salt and pepper to taste
- extra virgin olive oil
Instructions

Cut the tomatoes in half, seed the tomatoes by squeezing the half, allowing some seeds to remain along with most of the juice.

Chop the tomatoes. Mince the garlic and add to the tomatoes with the basil, and seasoning. Drizzle olive oil and stir well.

Slice the bread into ½” slices on the diagonal. Toast the slices on the griddle.

Rub the second garlic clove onto the toasted crostini and brush with oil.

Divide the tomatoes among the bruschetta and enjoy at once.
