Ingredients
- 8 Cups of chicken stock made with a double portion of chicken.
- 1 carrot diced
- 1 leek white part only, diced
- 3 cups of diced celery
- 1 clove of garlic minced
- 2 tbs. butter
- ½ cup of crème fraîche or cream
- 6 sprigs of parsley chopped.
Instructions

Sauté vegetables in 2 tablespoons of butter until soft. Add chicken stock and bring to a boil. Simmer for 20 minutes. Transfer the mixture to the blender and purée until smooth. Strain back into the soup pot. Stir in the crème fraîche or cream. Reheat to a slow simmer. Correct the seasoning. Garnish with chopped parsley.
Recipe Notes
To make your own crème fraîche, put 1 tablespoon of buttermilk into a cup of heavy cream. Cover and allow to sit over night.
