Ingredients
  • 8 Cups of chicken stock made with a double portion of chicken.
  • 1 carrot diced
  • 1 leek white part only, diced
  • 3 cups of diced celery
  • 1 clove of garlic minced
  • 2 tbs. butter
  • ½ cup of crème fraîche or cream
  • 6 sprigs of parsley chopped.
Instructions
  1. Sauté vegetables in 2 tablespoons of butter until soft. Add chicken stock and bring to a boil. Simmer for 20 minutes. Transfer the mixture to the blender and purée until smooth. Strain back into the soup pot. Stir in the crème fraîche or cream. Reheat to a slow simmer. Correct the seasoning. Garnish with chopped parsley.

Recipe Notes

To make your own crème fraîche, put 1 tablespoon of buttermilk into a cup of heavy cream. Cover and allow to sit over night.
