When the kids were little, we lived in Rio Vista, CA, and Denise was our neighbor. She was and is a wonderful friend and cook. This is a quick, easy and forgiving cake that uses those old bananas.

Ingredients
  • 1-1/2 Cups sugar or 1 cup honey
  • 1 cup soft butter or ¾ cup oil
  • 4 eggs
  • 2 tsp baking soda
  • ½ cup sour cream or yogurt
  • 1 cup unbleached white flour or 2 if not using whole wheat pastry flour)
  • 1 cup whole wheat pastry flour
  • 2 tsp vanilla
  • ½ tsp salt
  • 1 large package dark chocolate chips
  • 2-3 old bananas
Instructions
  1. Preheat oven to 350 F. Cream the sugar and butter or oil. Add the eggs one at a time, beating until they are light and fluffy.
  2. Sift flour, soda and salt, and add them to the egg mixture, stirring until just mixed.
  3. Mash the bananas.
  4. Mix in the sour cream or yogurt, bananas and vanilla.
  5. Gently fold in chocolate chips.

  6. Pour into a large, greased 9” x 13” cake pan and put in preheated oven for 50-60 minutes. 

  7. Cake is ready when at the center a toothpick comes out without crumbs.
Recipe Notes

The quality and quantity of chips that you put in the cake is important.  If you're a chocolate fan such as myself, or a chocolate nut like my trainer Ray, you'll want to use a 12 ounce package of dark Guittard or other favorite dark chocolate brand.  Even Ray thought there was enough chocolate in this cake.
